COOKIE MONSTER'S ME-LOVE MINI MEAT LOAVES1 pound ground meat for meatloaf (a mix of beef, pork and veal is best for flavor)
1 cup uncooked old-fashioned oatmeal
1 onion, grated
1 carrot, shredded
1 egg, beaten
1/3 cup ketchup
1/4 cup grated Parmesan cheese
1 teaspoon salt
1/4 teaspoon pepper
Additional ketchup for topping (optional)
Preheat the oven to 350 degrees F. Lightly coat 8 muffin cups with vegetable oil or nonstick cooking spray.
In a large bowl, combine the ground meat, oatmeal, onion, carrot, egg, ketchup, Parmesan cheese, salt and pepper. With clean hands or a wooden spoon, mix until well-blended.
Divide the mixture into 8 equal- size balls. Place a ball of meat into each muffin cup and press down lightly. f you like, brush the top of each mini-loaf with ketchup.
Bake until meatloaves are no longer pink in center, 20 to 25 minutes.
Makes 8 mini-meat loaves, (4 to 6 servings)
