ORGANIC MUSHROOM SPREAD AND DIP

1 cup chopped mushrooms
1 teaspoon minced garlic
2 tablespoons olive oil
1/4 cup chopped red and green bell peppers
1/4 cup chopped green onions
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh chervil or chopped celery leaves
2 tablespoons lemon juice
1/4 cup mayonnaise
Salt and ground black pepper
Paprika (for garnish)
Crackers (for serving)

Briefly saute mushrooms and garlic in the oil; drain well.

Mix the mushrooms with peppers, green onions, thyme, parsley, chervil, lemon juice and mayonnaise. Add salt and pepper to taste; top with paprika for color and flavor.

Serve with crackers.

Makes 6 servings
