EASY HOMEMADE TOMATO SAUCE1 tablespoon olive oil or vegetable oil
4 cloves garlic, finely chopped
1 small onion, chopped (about 1/4 cup)
2 cans (28 ounces each) imported pear-shaped tomatoes, drained
2 tablespoons chopped fresh basil leaves
2 teaspoons chopped fresh oregano leaves
1/2 teaspoon salt
1/2 teaspoon pepper
Heat oil in 3-quart saucepan over medium-high heat. Saute garlic and onion in oil until onion is tender. Place tomatoes in food processor or blender. Cover and process until smooth. Stir tomatoes and remaining ingredients into mixture in saucepan. Heat to boiling; reduce heat. Simmer uncovered 45 minutes, stirring occasionally.
VARIATION:MEAT LOVER'S TOMATO SAUCE:Stir 1 pound ground beef or 1 pound bulk Italian sausage into sauteed garlic mixture. Cook over medium heat, stirring occasionally, until done; drain. Continue as directed above.
Makes about 4 1/2 cups sauce
