I made this last night for dinner after tweaking a recipe I found online that did not include sausage. I was wondering how it would be without it, but knew the sauted veggies would add moisture since I add them to my turkey breast burgers. This may be the best meatloaf we have ever tasted and we are glad to find a way to make tasty meatloaf with adding sausage.
BUFFALO MEATLOAF
1/2 large finely chopped onion 10 fresh finely chopped mushrooms 1 Tablespoon olive oil 1 teaspoon Dijon mustard 1 1/2 Tablespoons ketchup 1 to 2 cloves , crushed garlic 2 teaspoons worchestershire sauce 1/8 cup egg replacement 1/4 cup buttermilk 1/4 cup plus two Tablespoons bread crumbs 1 teaspoon salt 1/2 teaspoon pepper Pinch cayenne 1 lb. ground buffalo Ketchup for topping
Saute diced onions and mushrooms until mushrooms give up their liquid. Remove from heat and let cool.
Preheat oven to 375 degrees F.
When onion/mushroom mixture has cooled, mix with remaining ingredients except buffalo, combining well. Gently mix in buffalo, don’t overmix. Place mixture in a loaf pan or mini loaf pans. Top with some ketchup.
Bake about 1 hour for regular size pan or half an hour for mini pans. Excellent served hot or cold. |
