Here is my cousin Baby's famous flan which is incredible.

You can also add 2 Tbsp. of instant coffee to the mixture to make it a Coffee Flan. You can make this in a bread loaf/meat loaf pan or a "flan" pan. What makes this flan unique from other flans is the extra sugar used in caramelizing the pan. Once the flan is inverted, there will be some hard caramelized sugar on the bottom. Simply crack it or knock it out of the pan with a knife over the flan so that the delicious sugar crackle is on top of the flan.

COUSIN BABY'S FAMOUS FLAN
serves 6-8

5 eggs
1 (12 oz.) can evaporated milk
1 (14 oz.) can sweetened condensed milk
1 tsp. vanilla extract
1/8 tsp. salt
5 Tbsp. sugar
1 cup heavy (whipping) cream

TO CARAMELIZE PAN:
Use 1 1/2 cups of sugar inside the pan. Put over meadium heat and caramelize. Tilt the pan so that all sides and bottom is covered. The color should be a golden bronze, don't burn it! Set pan aside.

In a blender, blend the rest of the ingredients listed except the heavy cream. Pour mixture into a bowl and then blend in the heavy cream.

Prfeheat oven to 350 degrees F.

Pour mixture carefully into the prepared caramelized pan. Place the flan pan in another pan filled with water, this is a "bain Marie". Cook for 1 hour. Let flan sit on counter for 1 hour to cool, then put into refrigerator overnite.

Once it is cold, run a sharp knife carefully along the sides and invert flan on a plate. The caramel will cascade over the flan and the hard part you will crackle over the flan.
